
Well it is done…I am not sure I am happy or sad, oh well so much for that. We had a very nice quiet Thanksgiving, just my Wife, my son and I. It was late we started to eat at around 7:00 pm. my son had to work that day, but they all got to go home at 6:30. We had the usual, with a few changes. We actually sat at our dining room table in our dining room, (wow what a novelty), and had a very nice table of China, Place mates, "cloth" napkins and a center pieces of candles and fall leaves. It was great, after all of the hustle and bustle of the kitchen,(my wife was in her element), my son was here at just the right time, with the helping, in high and heavy, affectionately known in our family as the three H's, (not), responsibility. He was also exposed to the reality of who is going to carve the turkey and he won, so I gave him some pointers and I was quite impressed with his talent and his patients with me saying no do it this way, no do it that way, here put the turkey there, and so on and so on. I must say his has the patients of a saint. After all of that, it was quite nice to just relax and eat, (a lot) of course. My youngest daughter wasn’t with us; she and her husband were celebrating their Thanksgiving "together" in their apartment, by themselves. This is quite a fete since they both have the weirdest schedules. She did the kitchen thing, (just like her mother), and her husband, well, it wasn't too clear what his role was, but I am sure it was complimentary to the whole feast. We sat around after dinner in our family room watching TV and complaining about how stuffed we were, I always thought that was a funny phrase, since we just ate a stuffed turkey. Oh well, you know our families humor, or lack of. But, Wait, we still wanted to eat pumpkin pie! Can you believe that? My wife made her famous Pumpkin pie (two) which were outstanding..it is so funny when my wife cooks and she always waits for the compliments and then she says it wasn't that good, then that is our queue to say oh it was wonderful and all of us fall over ourselves on who can give the best compliment, all the while she just sits there and think how can I milk this…ha ha ha. Aunt M, who was a master of that phrase,(we all knew it and kidded her about it), just sat there with a little twinkle in her eye, and you knew that the more we made compliments to her, the more it made it all more gratifying for her. Now that we think back we loved her for that. Do women get trained early on how to do that compliment thing…that will remain a mystery. I made a different pie a combination of mincemeat and pumpkin pie,(see recipe below), and before you say yuk, It as layered with the mincemeat on the bottom and the pumpkin on top. It was ok, I guess you have to acquire a taste for it, It needed something, maybe after it is refrigerated it might blend the flavors and make it even taste better, I'll tell you more after tonight when we have, guess what, leftovers. I look forward to that. I also look forward to the next few days of easy lunches and dinners of leftover turkey, sandwiches are my favorite. My oldest daughter had a house full of in-laws, and she called the next morning to tell us how it went. Now, we have the task of getting my son to get Christmas up and put out for all to see. My son put up the Christmas lights outside and I worked hard holding the ladder and giving him moral support. I think it was great. I am so happy he is here for us now that we are feeble and old…ha ha ha… I am glad we did it early, I won't turn on the light until tonight, I just wanted to get them up in case it snows. I like working outside of the house, I think people sometimes forget about how the house feels, and it needs to celebrate along with the inside, which is fair. I think the inside gets more attention, but not everyone can see it all. The outside is different; everyone that drives by checks it out. Today is black Friday and my wife and I are staying home. I don't like crowds now that I am older and don't like the rush and bustle of them. So my wife and I are cleaning up after the dinner. My son will come over on Sunday and help us bring in all of our Christmas boxes, so we can stare at them for about a week and eventually get tired of seeing sitting on the floor and in the way, and decide to open them and MELT when we see and recall all of the memories. Oh well, more about that later. I thought I would just write down some of the things that have happened and some of the events to happen. I have rambled on an on, hope that I didn't bore you. I wanted to let you know how it is over at this our house. I hope all you had a wonderful Thanksgiving and are ready and excited about Christmas. I know that I am.
PUMPKIN MINCE MEAT PARTY PIE

Pastry for one pie
2 c. mince meat
3 1/4 c. (30 oz.) can pumpkin pie mix
2 slightly beaten eggs
2/3 c. undiluted evaporated milk
Line bottom and 1 1/4 inches up sides of 13 x 9 x 2-inch baking dish with pastry. Spread mince meat over bottom of crust. Combine remaining ingredients. Pour over mince meat. Bake in 350 degree oven for 50 to 60 minutes or until knife inserted near center comes out clean.
PASTRY:
Stir 1/4 teaspoon salt into 1 1/2 cups flour. Cut in 1/2 cup butter. Stir in 1/4 cup water. Roll on floured surface to 15 x 11 inch rectangle.
Makes one 13 x 9 inch pie.
