Do you ever wake up in the morning and check your
Facebook? Well don't...I can tell/show you why below. I picked
up IPhone 6 and started to peruse the postings in my news feed...(Do I sound
like a tekkie or what?)...and BAM!...(thank goodness for the new IPhone, the screen is larger...hmm...maybe
not...it makes the picture better and clearer and you end up saying "I
can eat that"...or in other words...from a great movie..."get my face into
that)... because the first thing you see is a beautiful
picture of food. Well you're half awake and your eyes start to water,
and you readjust your glasses, then sit up in bed and get this wild look in
your eye and read and drool. That happened to me this morning...what is
up with my friends (huh)? Well, now I want to jump out of bed, that is pull my
body (albeit..slowly out of bed) and put my feet down about two or three feet to the soft
carpet. (all the while holding on to my precious IPhone) standing up
making sure I don’t fall over (no I'm not drunk...it takes me a moment to readjust my brain to my new body position so early in the morning)…then try not to wake my wife (of course)…wait who
is going to make this…well I could but that would ruin it for her…she loves to
cook breakfast. Well, in most cases it turns into Brunch. Duh! What was I thinking! Well, looking at the below picture and
thinking okay!!! Darn “me” he has done it again. Well, at least I hope in those kind and
gracious words. I know I’ve had a few
friends comment…telling me that I am a terrible person…how could I make them
gain weight??? Now that is getting a little area that isn’t fair…but guess what…the
next post is one of their concocting.
Usually they try to outdo me…and of course they can’t…LOL…I think they
gave given up on me. Isn’t it nice to
think of all the people that look at your posting and think my same thoughts…YUM!
Well here is the culprit…
Apple, Walnut and
Brie Bread Pudding Pancakes

Ingredients:
For the pancakes:

¾
cup Market Pantry whole wheat flour
·

tablespoons Market Pantry granulated sugar
·

tablespoon plus 2 teaspoons Market Pantry baking powder
·

teaspoon salt
·

Archer Farms Take & Bake country white rolls (or 7 ounces of any hearty
white bread), crusts removed, cut into ½-inch pieces
·

cups milk
·
1
teaspoon Market Pantry vanilla
·
¼
teaspoon Archer Farms ground cinnamon
·
2
eggs, beaten
·
3
tablespoons Market Pantry unsalted butter, melted
For the topping:
·

tablespoons Market Pantry unsalted butter
·

Granny Smith apples, peeled and chopped
·
½
cup Archer Farms raw walnuts
·
Dash
Archer Farms ground cinnamon
·
Dash
Market Pantry granulated sugar

Dash
salt

Brie
cheese slices

Farms pure maple syrup
Directions:
In a medium bowl, whisk
flour, sugar, baking powder and salt to combine.In a separate large
bowl, add cut-up roll pieces, milk, vanilla and cinnamon; stir to combine.Let sit 15 minutes,
stirring occasionally, until roll pieces begin to fall apart and get mushy. Add flour mixture,
beaten eggs and melted butter to bread pudding mixture; stir to combine. Let
sit another 15 minutes, stirring occasionally, until mixture is thickened
slightly. Heat a large griddle or
skillet over medium to medium-low heat (about 325 degrees F) lightly brush with
butter. Pour ¼-cupfuls of batter onto hot griddle.Cook 2 to 3 minutes
until bubbles form on top of pancakes and edges are dry; flip and cook another
2 minutes until golden brown on both sides. Transfer to a plate;
repeat with remaining batter, adding more butter to griddle as needed.
Meanwhile, make the topping: Heat a medium skillet over medium heat. Add butter,
apples, walnuts, cinnamon, sugar, salt and Cook, stirring it often, 5 to 7
minutes until apples are softened. Top pancakes with
apple-walnut mixture, slices of Brie cheese and a drizzle of maple syrup.
